Acolytes are the buffing and healing class, and they have the option of becoming a cleric or a disciple when they reach the appropriate level.
Acolytes have one main attack skill (Illusion Quake) and a stun skill (Spirit) until levels 56 and 61 when they get Oblivion and Ghost Steal, respectively. They can buff themselves and others, and they can heal, revive and undo some bad status (bleeding, poison).
Disciples later on become templars. Quoting from the disciple/templar guide post (http://www.outspark.com/forums/showthread.php?t=53595) ...
They're a mix of a Fighter + Healer, they have self-buffs and a Heal Over Time, and they have a damage reducing skill which makes them hard to take down when leveling against mobs. Only draw back is the lack of HP, which I will get into later on under "Builds/Stats" in this guide. They are melee, not ranged nor magic-ranged, though they do have a ranged stun skill (Burning Hands).
I hope this clears some things up for you.

Quite different, even if High Cleric and the Disciple retains some resemblance.
The Acolyte is weak in defence, supports for the most along with a few offensive skills and needs to kite to survive(a useful class for any party, but can get too dependant on them later on), while the Disciple on the other hand is hand-to-hand combat with some support skills. Yet, still needs tactics to survive with higher defense, but not too high defense in comparison with the Fighter's guild. (Takes some time to get used to)
(Assist Heal for example have little to no cool down in comparison with Fiesta, but the recovered amount is different, buffs overall for both classes in SoS have a lot shorter duration)
In short: Both the Acolyte and Disciple requires dedication to get far.
Use my guide for the Discs.

To become a mage you need to first be an apprentice when you change at level 16. At lv 66+ you can turn into a Mage by handing in the 3 coloured Demon Bloods.(From Loren, a map around Rudwork and the dungeon around Cyoren)
New skills: Buy from the Skill Merchant in Essene, get upgrades from loot you get from slain monsters or other players.
Base for the whole guild is Int, you might add Wis or Men later on if you want, but you won't need any before lv 60+.
