Those are your reserves so to speak. If you get into a really bad situation and you need a serious replenish to either SP or HP immediately, you can press the Q key to replenish your HP (its saved me from death MANY times) or you can press E to replenish your SP.
They come in handy as they don't take up inventory space and they give a good amount of SP/HP back depending on which you use.
