If let's say you are out in the field, and you need to step away for a quick second. Instead of using a return scroll, would opening up a shop with an overpriced item keep aggros from attacking you?
If so, is this legal to do?

Nope...opening a shop won't keep you safe. There was this running gag about an acolyte who would set up shop near the dangerous side of the bridge in Mystra Hill, and when I was there I'd see her dead almost every time I went to the map. I'd hate for that to be you.
However, if you're tracked in the safe zone of the map that you're in, you can hit a Warp scroll and set up shop there if that's what you'd like.

No but if you want another alternative. You can go into the SC store (alt+c), your character will disappear from the game and monsters won't be able to attack you.

yes but be careful with the alt-c thing, when you come back you might get aggroed and die.
