What should my stats be for mage?

INT and SPR. SPR adds to your survivability, INT adds to your damage. Damage can also be seen as a form of survivability. Recommended builds are 3:1 INT:SPR, 4:0 INT:SPR/3:1 INT:SPR tradeoff, or full int.

What should I pick, elementalist or summoner?

Elementalist has lots of little AoE's where the summoner only has one big AoE. Elementalist is generally better for solo PvE, summoner and elementalist would be about the same in group PvE and about the same in PvP. Summoner doesn't really have a fighting meat shield pet but more of a support pet to strengthen your skills. Feel free to make your decision from there.
