Easiest class for being a beginner... I would say is... beginnner?
For later on, as this is the Warrior discussion area, I'll have to say Warrior. Really though, melee characters should in theory be the cheapest to maintain as it doesn't cost much to swing a lot.
Actually warriors need to spend more money on hp and shields, so maybe Monk, the punch-things class that is usually the cheapest class to use in any Final Fantasy game.

Oh, I think they're fun to play. I think they are little people-shaped holes of power. But it's kind-of a hassle to get to lvl 10 in preperation of being a mage. You'll be weak the whole time, and you'll be expected to fight against the same monsters as everyone else, even though the monks and warriors will be able to plow through them much easier than we can. Luckily, we don't need a whole lot of exp to get there.
To summarize that all up: Mages are fun, and if you get mana recovery high enough, they're low maintenance, but hard to start the path with.

Levels 1-10 are such a very small portion of your total time playing the game that I wouldn't make class decisions based on them at all.
Once you choose your class, mages and priests are probably the fastest levelers, and fairly low maintenance - with ranged attacks, you probably aren't getting hit much, and therefore don't need many HP potions. Both classes also have increased mana regen.
Archers do fairly well with their ranged attacks too, but unfortunately they require purchased arrows. I don't believe the cost is that significant, though.
Warriors and monks do tend to get hit a lot, but fortunately they have the HP pool to take it and increased HP regen. I found that as a warrior if I AOE'd, I had to use both hp and mana potions, but they can level pretty quickly. Monks if I'm not mistaken kill faster than warriors, but I woudn't say either class is cost-efficient.
Rogues I understand are the worst class for leveling - they are melee range but lack the defense of a warrior or monk. They are also best with their weak attack, which is more difficult to use without getting hit.
The above are just my opinions - I'm hardly an expert. I will say, though, that at the end of CB, there were more mages and priests at 30+ than anyone else. Next was probably archer, followed by monk, with warriors and rogues being the fewest.
