To answer the OP's question about builds, there are several extremely prevalent and that is because they just work. There are a lot of variations (some even better than these), but these are the standard:
Pure END (the traditional tank).
My personal opinion is that this build was a fail from the beginning, you will be able to soak up a lot of damage, but dealing the pain is another question. This is a good build if you plan to party A LOT.
Pure STR (the pure DD)
Damage Dealers are in style right now, the idea with this build is that if you hit the level cap soon enough, then with +9 equips you'll be one of those "overpowered fighters."
25 SPR, rest STR (the hybrid/crit DD)
Have seen great results with this build as it maximizes the damage potential of Devastate (lvl 43 AOE stun... best move in the game).
My personal suggestion would be to start out with one of these and then augment it as you become more and more familiar with the game's content. I ended up with a 25spr, 40 dex, rest str build and I love it.
