Kill monsters which have their name displayed in blue :-P. You can either fight them one at a time or "mob" them by hitting all the guys on a map once and hiding in the corner spamming strong attack and healing potions. Mobbing is faster, more expensive and not very neighborly.

Basically, once you get class upgrade, you're gonna kill the strongest monkeys you can kill until the xp drops, then move on to Balderan, then do the same before moving to Amakusa and so on and so forth. It's very, very linear.
