would like a 4/1 str/end build be good or even like a 5or6/1 str/end be good??

STR/END hybrids have their plus sides and their drawbacks. The more STR you have, the more dmg you do per hit, but the more damage you take; and END only adds def every 2 points -and is more useful for shield-users because of the block increase. Most DD fighters will say adding a small amount of END just weakens your attack, but really it's up to how you play.
Adding anything but INT to a fighter is good.
