lantern souls are for Myzen's quest (a cpu character located in Elderine town). which in collecting 50 you can trade it for a pudding or a 30 day pumpkin mask. As for the stats on your warrior (fighter) I would recommend you to check guides of this matter in the class discussions.

if you collect I think 5 puddings you can trade them for the permanent cat mask. That's a separate quest you get from Zach in Roumen(the town you start in). So you need 250 lanterns, turn them in to Myzen in Elderine for 5 puddings and then turn those in to Zach for the permanent cat mask. The 30 day pumpkin head you just need to turn in 50 lanterns and get one. It's repeatable so you can stock up if you have enough lanterns.
