You right mouse click on the item to sell it one at a time or you can hold down the Ctrl key and right mouse click to sell the number in that spot.

Right click on certain items like buff scrolls to use them

SOME items, liek scrolls and potions you use. The little description that shows when you hover over the item tells what it does.

Other items, really most items you find off mobs, like crushed bones and tough meat, are ingredients. There are several production skills that can be learned (Potion making [HP and SP potions for example], scroll making [mostly for buffs, like Vitality with gives you more HP for a time), and stone making [for those stones you use to enchant equipment with], along with two skills to change one ingredient into another [low quality coal into regular coal]). Those skills use those items to make more useful ones. The item's description will tell you what skill uses it.

As far as selling things, there's three ways to sell things:

NPC sales: Jhanniss explained how that works: just go to any NPC who's selling something and you'll be able to sell to them.

Purchase shops: You probably have seen them around: Mushrooms with messages on top that start with "Purchase shop...". Those are stores set up by players: they ask for certain items and offer a price for them. Double click on the message on top of the mushroom and you'll see what they want and how much. Then if you have what they want, right click on that item, choose how much you want to sell and there you go. A few things though:

CAREFUL about their buying price. click on the item they posted to see their asking price, then click on YOUR item to see what the NPCs will sell it for. If you see them wanting to buy something for 1c, but the item will sell to NPCs for 3c, you might as well leave and sell to the NPCs instead. Also shop around for the best price.

The shops are tricky to use sometimes. The shop window will usually show more than one of the same item, but only a certain amount on each item. Example, they list that they want 10 tough meats then 20 tough meats. When selling, sell only as much as ONE of the listings show (so only sell 20 tough meats, then 10 tough meats). You'll get it FAST once you try it.

If you can't sell to a shop, and you aren't trying to sell too much at once, they probably run out of cash to buy anything. Leave them be.

The last way to sell is to make a sale shop of your own. Click 'B' to get the house window. Then choose 'Sell' to make a sale shop ('Buy' creates the very purchase shop I talked about earlier, while 'home' just lets you rest), put your items in, choose how much to sell, how much it'll cost, a title, then 'open shop'. Just make sure you aren't close to NPCs and not right on top of another home.

And that's the three ways to sell to others.
